how much power would you gain if you removed the viscous fan, and installed a electric fan on the radiator?

2kw tops if you are lucky. You loose it again when the alternator kicks in to feed the electric fan. No free lunch.
The viscous fan isnt that bad. When the engine is cold it is fairly free spinning so doesnt use much power. When hot the fluid inside increases in viscosity so the fan stiffens turning faster.
Sanding your knuckles before starting work can help. That way you cant skin them
