3.1td 5 speed, my first 4wd, mainly to be used for fishing etc, but would like to try my hand at some casual 4wding, what do you think?

Any suggestions as to what to modify first, its completely standard apart from Bridgestone dueler AT tyres?

You mean completely standard
If your use is only to get to a favorite fishing hole then dont do anything.
I would wait a few months before changing anything as all mods add far less to the value than they cost.
If changing tyres fit some nice muds. If the exhaust goes upgrade to 2.5 or 3 inch. Everything else has costs. Suspension upgrade think 500 min in parts but then you can fit bigger tyres.
Side steps should come off as they are easily damaged
Snorkel if going near water
A cheap mod worth doing is deep dish rubber mats
Sanding your knuckles before starting work can help. That way you cant skin them
